Anyone remember the round sweet fritters used to serve at Little Castle Hamburgers in Wichita Ks? How to make?
I worked there one summer and am thinking about setting up a stand to sell them where I live now, but I don´t remember what was in the batter. Just remember that we would pipe out the batter directly into the hot oil and I think we´d make a circle and then fill it in sort of criscrossing the batter inside the circle. And it´d be done in a minute - just sprinkle on powdered sugar and done. All the recipes I find now are made with fruits or vegetables (the ones we sold had none)and they seem to take longer to cook. These took like a minute if I remember correctly and that would be important for this kind of sale. Thanks for any help!!!!!

Funnel Cakes Funnel cakes are made by pouring batter through a funnel into deep hot fat. INGREDIENTS: 3 eggs, beaten 2 cups milk 4 cups all-purpose flour 1/3 cup sugar 1/2 teaspoon salt 1 tablespoon baking powder oil for deep frying sifted confectioners' sugar PREPARATION: Beat eggs with milk. Sift together flour, sugar, salt, and baking powder; add to eggs and milk. Beat until very smooth. Heat oil in deep fryer to 370°. Holding the funnel with one finger keeping the opening closed, fill with batter. Open the end of the funnel and allow batter to run out in a stream into deep hot fat. Move funnel from center, swirling outward in a circular pattern. Fry for 2 to 3 minutes, until golden brown. Transfer fried funnel cakes to paper towels to drain. Shake sifted confectioners' sugar over drained funnel cakes. Makes 20 to 30 funnel cakes, depending on size. Funnel Cake Funnel Cake is a very popular sweet served at fairs and carnivals. INGREDIENTS: 1 cup flour 3/4 teaspoon baking powder 1/4 teaspoon salt 1 egg 1 cup plus 1 tablespoon milk 2 tablespoons sugar Optional toppings: powdered sugar, granulated sugar, cinnamon, warmed apple or other fruit filling, ice cream, whipped cream, syrups PREPARATION: Combine flour, baking powder and salt in a bowl with wire whisk. In another bowl, beat egg and milk. Add sugar, stir to dissolve. Add dry ingredients and (using electric mixer) beat until smooth. Heat at least 1 inch of oil to 375 degrees F. FUNNEL CAKE: Make in either in a deep fryer or a skillet. To form each funnel cake, place one finger over hole in bottom of funnel. Carefully fill funnel with batter. Over hot oil remove finger and allow batter in go into oil. Make circular or other shapes with batter. Cook for 1 minute and using tongs or two spatulas turn funnel cake. Cook until golden brown, about another minute or so. Drain on paper towels. Sprinkle with sugar or use other toppings. Serve warm. not being from the midweast wasn't sure if you meant this recipe. it sounded more like what you were talking about then a fritter. hope this helps. good luck.
